[It Feels Like Summer] Strawberry Nice Cream!

We are breaking record high temperatures here in New England today. Sounds like the perfect time for ice cream, right? Wrong! It’s the perfect time for Nice Cream. Nice Cream is basically pureed frozen bananas that somehow magically turn into a delicious treat that has the texture and taste of soft serve ice cream. You can really make it in just about any flavor (more recipes to come this summer), but today we are making strawberry. This particular bowl I ate for breakfast (oops), so it has ground flax seeds blended into it as well, but I will leave that out of the basic recipe. Check it out:

Here are my top 3 Nice Cream making tips:
- I recommend using a food processor because you can breakdown the frozen bananas first without adding any liquid until the end which makes a thicker Nice Cream. That said a blender works too. I have even made it with one of those single serve Magic Bullet things in a pinch.
- Always have frozen bananas cut up in your freezer. That last banana of the bunch is always just a little too ripe for eating fresh, so just cut it up, put the pieces in an airtight container, and pop it in the freezer for later. Frozen bananas are also good for smoothies.
- Make extra for later! Put your extra Nice Cream in a bowl (or a loaf pan works well for this too), cover it with plastic wrap and freeze it. Then it scoops more like a hard ice cream.

Ingredients
- 2 Bananas, cut into pieces and frozen (for at least 3 hours)
- 1 Tbsp plain unsweetened almond milk, more as needed
- 1 cup frozen strawberries
- 1/4 tsp vanilla extract
- fresh strawberries or mini chocolate chips for serving
Instructions
- Put the frozen bananas and strawberries into a food processor and pulse the blade until the frozen fruit breaks down to what looks like pea-sized gravel.
- Scrape down the sides of the bowl.
- Add the vanilla extract and the almond milk.
- Put the processor on high until the Nice Cream is smooth (you may need to add more almond milk at this point) and thick like soft serve ice cream.
- Enjoy now or freeze for later.
