Buffalo and BBQ Cauliflower Bites [Not Even Sad There Is No Chicken]

It’s Superbowl time baby! I have seen enough Superbowl party food spreads to know that vegetables are not usually the star. Maybe a few people pick up a carrot stick as a vessel for blue cheese dressing, but other than that, no one is getting excited about vegetables on Superbowl Sunday…until now. Introducing cauliflower bites:
And the crowd goes wild!!!!
No seriously though, these are awesome. They are super simple to make and you can sauce them however your like; BBQ sauce and Buffalo sauce shown here. Dip them into an avocado dill dressing and you will feel like a winner (even if you are a Falcon’s fan…ohhhh burn). I know you have a party to prepare for, so let’s get cooking!

Buffalo and BBQ Cauliflower Bites [Not Even Sad There Is No Chicken]

Ingredients
Cauliflower Bites:
- 1 head of cauliflower, cut into bite sized florets
- 1/2 cup whole wheat flour
- 1/2 cup water
Buffalo Sauce:
- 2/3 cup Frank's RedHot Sauce (or your favorite hot pepper sauce)
- 2 tsp oil (something mild tasting)
- 2 Tbsp rice vinegar
- 1/4 tsp soy sauce, tamari, or liquid aminos
- 1/8 tsp garlic powder
- 1/4 cayenne pepper (if you like it extra spicy) *optional
BBQ Sauce:
- 2/3 cup your favorite BBQ sauce (I like the Woodstock Brand)
- 2-3 Tbsp water
- dash of hot sauce *optional
Avocado Dill Dipping Sauce:
- 1 ripe avocado
- 1 heaping Tbsp fresh dill, chopped
- juice of 1/2 lime
- pinch of salt
Instructions
Cauliflower Bites:
- Pre-heat your oven to 450 degrees F.
- In a bowl whisk together the water and flower until a smooth batter forms.
- Add the cauliflower pieces into the bowl and toss until all of the pieces are well coated with the batter.
- Spread the cauliflower out in a single layer on a baking sheet.
- Bake at 450 degrees F for 15-20 minutes, flipping them halfway through. They should be starting to brown when they are ready.
- Remove the cauliflower bites from the oven and toss them in the sauce of your choice until they are well coated.
- Spread them back out on to the baking sheet and bake for an additional 3-5 minutes.
Buffalo Sauce:
- Mix all ingredients together in a sauce pan over medium heat, until the sauce starts to bubble.
- Transfer to a large enough bowl to toss the cauliflower bites and sauce together.
BBQ Sauce:
- Whisk the BBQ sauce and water together in a sauce pan over medium heat, until the sauce starts to bubble.
- Transfer to a large enough bowl to toss the cauliflower bites and sauce together.
Avocado Dill Dipping Sauce:
- In a blender combine the avocado and lime juice and blend until it is smooth, you may need to add a little warm warm or more lime juice depending on the ripeness of your avocado.
- Remove the mixture from the blender, stir in the dill, and add salt to taste.
