Quick Weekday Breakfast Hash

I’m bringing savory back! To breakfast that is.  The default breakfasts in plant based eating are usually sweet: oatmeal, fruit, smoothie bowls, etc., but to be honest I actually really prefer a savory breakfast.  I make a lot of tofu scrambles, savory oats, breakfast tacos (obviously), and breakfast hashes like the one in this post.  There is nothing glamorous about this recipe and you won’t cook this for your friends to impress them with your new plant based diet, which is exactly why I am posting it.  This is a Monday morning, 5 minute, savory breakfast recipe, and I love it.  Take a look:

This is a very forgiving recipe and will really taste great with any vegetables that you like.  It is also a great way to use leftovers (think roasted potatoes, squash, beets, etc).  In this particular “masterpiece” there are sweet potatoes, mushrooms, a veggie burger (seriously), garlic, and onions.  BTW, the veggie burger pictured here is made by Bubba Burger.  Look at those whole peas and black beans, right?  They make a pretty tasty veggie burger, just saying.  I also really like Trader Joe’s Masala Vegetable Burger in this kind of breakfast.  That said, sometimes I use beans, tofu, or tempeh instead of veggies burgers.  Like I said, this is a really forgiving… If for some reason it doesn’t come out delicious, that is why we have Siracha sauce.

I just wanted to bring savory back to plant based breakfast.  That is all that I have to say for myself today.
