[Everything But The Bagel] Seasoned Soba Noodles
This recipe came about in a kind of boring way, but I am going to tell you the story anyway, haha, sorry. I’ll keep it short, I promise.
I have been using “Dr. Greger’s Daily Dozen” app to keep track of my food lately. I track my food intake from time to time, especially when I am stuck in a food rut or find myself enjoying a little too much vegan junk food (seriously though, Ben & Jerry’s non-dairy Cherry Garcia is amazing). I find that tracking my food helps me break bad habits. Sooo…this past Saturday I made some lentils and then ended up eating an unreasonable amount of them for lunch. Then I checked off ALL of the little boxes for “beans” on the app, and realized that by dinner time I had a whole bunch of whole grains left to eat. I don’t make a lot of entrees without legumes in some form or another, but that day I clearly did not need to eat any more of them.
So I decided I was going to carb it up for dinner!
I had just finished a run, was starving, and was dying to use the “Everything But The Bagel” seasoning that I had just picked up from Trader Joe’s, and then this delicious, super quick dish was born…that’s it, that’s the end of the story.
Ok, so that wasn’t the best story that I’ve ever told in my life. But, it did give me a chance to tell you about 2 things that I am digging lately: my favorite food tracking app “Dr. Greger’s Daily Dozen” and Trader Joe’s Everything But The Bagel Seasoning. You’re welcome :).

[Everything But The Bagel] Seasoned Soba Noodles
Ingredients
- 3 oz soba noodles
- 2 heads of baby bok choy, chopped
- 1/2 cup sliced crimini mushrooms
- 2 Tbsp chopped fresh cilantro
- 1 Tbsp rice vinegar
- 1 tsp olive oil
- 1-2 tsp "Everything But The Bagel" Seasoning with sesame seeds to taste.
Instructions
- Start the soba noodles first, preparing them as per package instructions.
- While the noodles are cooking, place a saute pan over medium/high heat and saute the mushrooms and boy choy for about 5 minutes until the boy choy has softened and the mushrooms are starting to brown.
- When the noodles are done, drain them and add them to the saute pan, toss to mix well.
- Add the oil, vinegar, cilantro, and seasoning to taste, toss again.
- Serve and enjoy 🙂
