Chia Seed Pancakes [Oil Free]
Let’s take a quick trip into my silly little weekend brain, which is much different than my weekday doctor brain, I promise!
Sometimes I like to change words into similar words that sound funny to me, seriously, I really do that and I’m a little bit embarrassed about it. Perhaps that habit is a byproduct of using fancy doctor words all day in the office? Yeah, let’s go with that. Anyway, I started off calling pancakes, panny-cakes. Like pancakes, but cuter. Then panny-cakes turned into fanny-cakes…because, well…usually pancakes are unhealthy and can give you a big fanny. Get it? It’s ridiculous, I know. I’m going to stop talking now.
Well, it’s time for traditional pancakes to get a make over. No more fanny-cakes for me!
This made-over recipe features whole wheat flour and chia or flax seeds. It is completely oil and dairy free aannnnddd is much lower in sugar than the original version.

By the way, I have used both chia seeds and ground flax seeds in this recipe and both work great, so feel free to use whichever you like. Both flax seeds and chia seeds are a healthy source of cancer fighting lignans, fiber, and heart healthy ALA omega-3 fatty acids. In case you were wondering, flax seeds contain more omega-3 fatty acids and lignans than chia seeds, but less fiber. So, even though flax seeds may be “better” for you, chia seeds are still good for you too!

Chia Seed Pancakes [Oil Free]
Ingredients
- 1 cup whole wheat flour (pastry flour works best, but use what you have)
- 1 Tbsp baking powder
- 1/8-1/4 tsp salt, to taste
- 1 cup vanilla almond milk
- 1 Tbsp sweetner of your choice, try maple syrup, honey, agave, or sugar
- 1 Tbsp chia seeds or ground flax seeds
- 2 1/2 Tbsp water
Instructions
- In a small bowl mix together the chia or flax seeds and water, set aside for about 5 minutes while you get your other ingredients together.
- In a large bowl whisk together the flour, baking powder, and salt (you can sift it if you are feeling fancy).
- Add the almond milk and sweetener of choice to the dry ingredients, and stir until everything is well mixed.
- Add the chia or flax seed mixture to the batter and stir again.
- If you are using a griddle, turn the heat up to 375 degrees F. If you are using a frying pan, put it over medium heat.
- If your cooking surface is not very non-stick add a small amount of cooking spray to it.
- Using a 1/4 cup measurement, pour the pancake batter onto your cooking surface.
- Flip the pancakes when the surfaces of them are covered in small bubbles (you guys know how to make pancakes, right?).
- Once browned on both sides, remove them from the heat and serve.
- Top with your favorite toppings and enjoy!
