BBQ Bean Burritos

I know that it is called Taco Tuesday, but I like burritos too, so today we are making burritos.  Whatever 🙂

Today, I Wikipedia’ed burrito because I was wondering exactly what makes a burrito…a burrito.  What I “learned” is that burrito means little donkey in Spanish.  The food either got it’s name because they resembled the bedrolls and packs that are carried on donkeys OR because they were originally sold by a guy who rode around on a little donkey.  Is any of that even true?  Someone please confirm or debunk that for me in the comments, seriously.  What I was really looking to find out was whether or not a burrito always has to contain a certain ingredient to be a burrito…rice, refried beans, etc.  Turns out that a burrito just has to completely enclose it’s filling…so basically a well wrapped up taco.  Conclusion: it is okay to eat burritos on Taco Tuesday.  I’m glad we clarified that.

BTW – rice and beans together are a complete protein (i.e. together they have all of the essential amino acids).  Check out my post about protein in the Sipping Tea with Dr. G category for more.

Should we just make burritos now?

 

 

These burritos were so good.  The butter beans are so creamy and have a mild flavor that really lets the BBQ sauce be the star of the show. When I make them again I think that I am going to throw a few mango slices in there.  Yum! Happy Taco (erh…burrito) Tuesday!
