Blueberry and Lemon Oatmeal

When I was a kid I used to love those little packages of instant oatmeal. One of my favorite flavors was blueberries and cream…but let’s be honest, I loved them all: maple brown sugar, cinnamon raisin, strawberry, peach…drool…
I still really like oatmeal, I just try to eat a less sugar laden version now. I made this blueberry and lemon oatmeal one Sunday morning and decided it was too good not to share.

Ingredients
- 1 cup cooked oats (rolled, quick cook, steel cut, whatever you like), according to package instructions
- 1 tablespoon ground flax seeds (optional)
- 1/4 cup dried unsweetened blueberries (fresh would be great too if they are in season)
- 1/4 cup sliced almonds
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- lemon zest, to taste, maybe 1 teaspoon or so
Instructions
- Prepare the oats according to the package instructions.
- Add the ground flax seeds in while you are cooking the oats (chia seeds are great too).
- When the oats are done, add the almond milk, vanilla, blueberries, and almonds.
- Stir everything together and then top with the lemon zest.
