Fall Breakfast Bowls

If quick colorful breakfast foods are your thing, then here are 2 great ideas for you. What is easier than literally piling random ingredients from your fridge and pantry into a bowl and calling it a meal? Who has a pantry by the way? By pantry I mostly mean my cabinets. Bowls are a fun way to pack a bunch nutrient rich foods into a small space. The idea is that there is a base of some kind (a smoothie, oatmeal, rice, quinoa, etc) that is then topped with various delicious items. There are more fall fruits out there than pumpkins and apples. I wanted to show case some of what the season has to offer with these breakfast bowls! Ripe persimmons are featured in the first bowl and pomegranates in the second. Here are my 2 fall inspired breakfast bowls for you to try:
Dark Cherry Smoothie and Persimmon Bowl
Oatmeal, Plantain, and Pomegranate Bowl (In case it is already getting cold and you need a warm breakfast)
Quick food advice: Eating foods of different colors will provide you with a greater variety of vitamins and minerals (micronutrients). On this blog I don’t often talk about specific sources of vitamins and minerals because if you are eating a variety of types of foods in a variety of colors, you are more than likely getting all of the micronutrients you need. I am a busy person, as I am sure you are too, and I find it much easier to “eat the rainbow” so to speak than to count milligrams of micronutrients everyday. Word!

Ingredients
Smoothie Bowl:
- 1 cup frozen dark cherries
- 1/2 frozen banana
- 3 ice cubes
- 1/4 cup almond milk
- 1 tablespoon unsweetened flaked coconut
- 1 persimmon sliced
- 1 tablespoon chia seeds
- 1 tablespoon walnuts
Oatmeal Bowl:
- 1 cup cooked plain oatmeal
- 1/2 plantain
- 1 handful fresh raspberries
- 1 handful pomegranate arils
- 1 tablespoon unsweetened flaked coconuts
- 6 pecans
- 1 tablespoon cacao nibs
Instructions
Smoothie Bowl:
- Throw all of that into the blender until smooth.
- Pour into a bowl.
- Top with your toppings
Oatmeal Bowl:
- Cook your oatmeal as per package instructions
- Pour it into a bowl
- Cut plantains into rounds
- Place rounds in a frying pan over medium heat without any oil
- Brown on both sides
- Place rounds onto oatmeal bowls
- Top your bowl with the rest of your toppings
